Sauce Vierge


  • 85 ml (3 fl oz) olive oil
  • 25 ml (1 fl oz) lemon juice
  • 1 tsp coriander seeds, crushed
  • 8 basil leaves, julienne (cut in strips)
  • 2 tomatoes, skinned, seeded and diced


  1. Heat the oil gently in a small pan, then add lemon juice. Remove from heat.
  2. Add coriander and basil and leave to infuse in the warm oil for a few minutes.
  3. Add the diced tomato and serve immediately by pouring over cooked fish or shellfish.
