Sauce Vierge
Ingredients:
- 85 ml (3 fl oz) olive oil
- 25 ml (1 fl oz) lemon juice
- 1 tsp coriander seeds, crushed
- 8 basil leaves, julienne (cut in strips)
- 2 tomatoes, skinned, seeded and diced
Directions:
- Heat the oil gently in a small pan, then add lemon juice. Remove from heat.
- Add coriander and basil and leave to infuse in the warm oil for a few minutes.
- Add the diced tomato and serve immediately by pouring over cooked fish or shellfish.
